Ingredients
For the honey vinaigrette dressing:
- 1/2 cup of canola oil
- 1/3 cup of white balsamic vinegar
- 2 Tbsp. of honey
- 2 tsp. of minced red onion or shallot
- 1/4 tsp. of kosher salt
- 1/4 tsp. of black pepper
For the salad:
- 2 beefsteak tomatoes
- 1 peach, diced
- 1 cup of fresh corn kernels
- 1/4 tsp. of kosher salt
- 2 oz. of crumbled feta cheese (about 1/2 cup)
- 1/4 tsp. of black pepper
Tomato, Peach and Corn Salad
Instructions
1. To make the dressing, combine all ingredients together and mix.
2. Cut tomatoes into wedges.
2. Combine with diced peach and corn kernels in a medium bowl.
3. Sprinkle with salt.
4. Drizzle with honey vinaigrette dressing and toss to coat.
5. Top with feta cheese and sprinkle with pepper.
